You've got a new smoker or grill. Do you need to get some pork, beef, poultry or fish and start cooking right away. The answer is NO! I have seen this done. Afterwards they wondered why their meats or whatever they had on the grill had a "funny taste" or"tasted bad". There is a reason that happens. As I have heard other people say "you put the cart before the horse". What are the first things you should do with a new grill or smoker?
Assemble it if it needed.
Conduct a "Burn-In" of your smoker/grill BEFORE cooking anything on it.
You must do this to remove any residue of oils left on your smoker or grill parts. If you do not do this your grilled/smoked offerings will taste bad. Read the instructions that come with your new smoker/grill on how to conduct a burn-in for your equipment.
If your item is "used". First clean it thoroughly then conduct a burn-in. You will be glad you did. If you do not know what a "Burn-In" is or need instructions on how to do it use Google or watch YouTube to find out.
